Simple Peanut Butter Cookies

Makes 3 dozen small cookies


½ cup unsalted sweet butter, room temperature

1 cup granulated sugar

1 cup light brown sugar, firmly packed

2 large eggs

½ teaspoon vanilla bean paste

1 ¾ cups chunky peanut butter

2 ¾ cups AP flour

1 teaspoon baking soda

1 tablespoon large crystal white sanding sugar (optional)


Preheat oven to 350 degrees F. 


Line 2-3 baking sheets with parchment paper.  Set aside.


In a kitchen stand mixer, cream together butter and sugar until light and fluffy.  Add eggs one at a time until incorporated.  Add peanut butter and vanilla bean paste and allow to mix until incorporated.  Stir baking soda into the flour and add flour.  Mix until flour is incorporated.


Using a small ice cream scoop, scoop cookie batter out onto cookie sheet leaving a 3 inch radius around each cookie.  Slightly flour your hand and gently press down cookies.  Using a lightly floured fork, press with fork to leave a crisscross (hashtag) pattern on top of the cookie.  Sprinkle with sanding sugar if desired.


Bake for 12-14 minutes until the edges of the cookie are light golden brown.  Remove from oven and allow the cookie to cool on the cookie sheet.

Vanilla Bean Gelato

One quart


5 egg yolks

1 cup sugar

2 cup heavy cream

2 cup whole milk

2 Tablespoons vanilla bean paste



Place egg yolks and sugar in a large bowl and whisk until mixture is pale yellow and thick.  Set aside.


In a medium saucepan, heat the cream, milk, and  vanilla bean paste, until it just simmers.   Remove from heat, and allow to cool 5 minutes.


Gradually whisk warm but not hot cream mixture into the egg mixture, adding slowly and whisking constantly to prevent cooking the eggs.  Return mixture to saucepan and cook gently, stirring constantly until mixture thickens slightly and coats the back of a spoon.  Do not boil.


Strain mixture, cool to room temperature, then cover and refrigerate until completely cold.


Transfer to an ice cream maker and freeze according to manufacturer’s instructions.

Bacon and Egg Muffins


Makes 12 muffins

1 1/2 cups all-purpose flour

2/3 cup yellow cornmeal

1 Tbsp. baking powder

1/2 tsp. baking soda

1 tsp. salt

1/4 cup unsalted butter

1/2 cup shredded cheddar cheese

4 large eggs, beaten

1 1/2 Tbsp. sugar

1 cup butter milk

1 cup cooked bacon crumbles

1 cup corn kernels


Preheat oven to 375°. Spray muffin pan to prevent sticking. Or line with muffin cups.


Sift the flour, cornmeal, baking powder, baking soda and salt together in a mixing bowl.


Add the cheddar cheese, eggs, buttermilk, sugar, bacon, and corn and stir until just combined.


Divide the batter among 12 muffin cups, each 2/3 full, and bake for 15-20 minutes or until muffins are puffed and golden. Serve warm.

Plum Upside Down Cake

Makes one 9 inch cake

Fruit Topping:

4 plums, not too ripe, pitted and sliced

4 Tablespoons Unsalted butter

¾ cup light brown sugar



1 cup All Purpose Flour

1 cup Almond Four

2 teaspoon Baking powder

¾ cup Granulated Sugar

½ cup Unsalted Butter, room temperature

3 Large Eggs

2/3 cup Buttermilk

1 ½ teaspoon Vanilla Extract


Preheat oven 350 degrees F. 


In a small saucepan melt butter and sugar together just until boiling.  Remove from heat and allow to cool slightly.  In the meantime, mix together cake batter.


Sift together  flour, almond flour, and baking powder.  Set aside.   Cream together butter and sugar until light and fluffy.  Add together the eggs and vanilla extract  and mix until incorporated.  Alternate the dry ingredients with the buttermilk being careful not to over mix. 


Place plums carefully in a circular pattern in a buttered pan with parchment ring.  Pour butter /sugar mixture over them carefully so as not to move the fruit.   Add the cake batter and bake for 45-50 minutes until toothpick inserted into the center comes out clean. 


Cool for 5 minutes, then invert cake onto a serving dish.  If you let it cool too much fruit will stick to bottom of pan. 


Serves 8

6 cups fresh spinach

1 cup fresh cherries, pitted (preferably Yellow or Rainier)

½ cup toasted pistachio pieces


Wash greens and dry. Tear into bite size pieces if necessary.

Toss greens with dressing. Top with other salad ingredients.



Champagne Vinaigrette

1/2 cup Champagne vinegar

1/4 Dijon mustard

1/4 cup honey

1/4 cup extra virgin olive oil

Salt and pepper to taste.


Whisk ingredients together adding oil last to create an emulsion.  Adjust seasonings to taste.

This app is handy for both first-time grillers and veterans. It can calculate your cook time based on the cut of meat, size, thickness, and how done you want it, it also includes a timer to tell you when to flip and when to take your steaks off the grill. The app has instructions for preparing over 100 different foods, recommended internal temperature guides and resting times. It allows for multiple simultaneous timers, so if everyone is having steaks but there's one person who insists on having a chicken can time them all. AND---it syncs with your apple watch, so you don't need to keep checking your phone.

Chocolate Brownie Batter Gelato

 Makes 4 1/2 cups

4 fl. oz. heavy cream

28 fl. oz. whole milk

5 1/2 wt. oz. granulated sugar

3 fl. oz. egg yolks

2 vanilla beans, pulverized

1/8 tsp. salt

4 wt. oz. semi-sweet chocolate, melted and slightly cooled

1 Tbsp. espresso


Heat cream, milk, sugar and vanilla beans in a heavy saucepan, stirring occasionally until the sugar is dissolved and the mixture is hot but not boiling.


Place egg yolks and salt in a separate bowl and whisk briefly.  Still whisking, slowly add hot cream mixture into egg yolks using the liaison method.  Cook over medium heat, stirring constantly, until mixture thickens slightly.  Add chocolate and espresso.  Don’t let it boil.  Strain the mixture, and place in the refrigerator to cool.  Fill the machine and freeze.  Swirl in brownie batter before serving if serving soft serve. Or fold in brownie batter and place mixture in freezer to harden overnight. 



Brownie Batter for Ice Cream

1/4 cup prunes (about 8 prunes)
3/4 cup water
1 cup unbleached all-purpose flour
3/4 cup granulated sugar
1/4 tsp. salt
1/2 cup cocoa powder
1/4 cup vegetable oil
1/2 cup maple syrup
1 tsp. vanilla extract 
1/2 cup walnuts, finely chopped (OPTIONAL)


In a small saucepan, combine prunes and water and simmer for 5 minutes, or until prunes are soft; allow to cool slightly. Meanwhile, in a medium bowl, combine the flour, cocoa powder, sugar, and salt, and stir until combined.


In a blender, puree prunes and simmering liquid with the oil, milk, maple syrup, and vanilla until thoroughly incorporated. Pour the wet mixture into the dry mixture, and mix until just combined. If the batter is still dry, add water 1 Tbsp. at a time, just until the batter comes together; too much water may make the batter harden more in the freezer. Mix in the walnuts.
